Education:High school graduate or equivalent. Experience:Must have previous quantity food production experience. Experience in hospital or skilled nursing facility cooking is desirable. Knowledge: The incumbent must have knowledge of weights, measures and conversions to cook and calculate amounts. Knowledge of modified diets is helpful. Specials Skills/Equipment: Must be skilled in use/cleaning equipment used in quantity food production to include grill, stove, ovens, steamer, slicer and knives. Must be able to read and interpret menus and have mathematical ability to accurately increase and decrease recipe amounts. The Cook must be able to speak, read and understand English to effectively direct the activity of other kitchen staff. Physical Requirements: This position requires extensive standing and/or walking, lifting and carrying supplies, pans and trays, as well as working in a hot/humid kitchen environment. Must meet basic health requirements of Kahi Mohala physical examination including TB clearance.
